One of the reasons I love shopping at the greenmarket is discovering new produce and recipe ideas to try, like this one here. An autumn salad of spicy mustard greens and watermelon radish balanced with the sweetness of corn, apple and a light honey vinaigrette—spicy, sweet, and crunchy. This lovely salad is the creation of Ally Campbell, manager (and creative cook) of my local greenmarket in Brooklyn. Recipe Follows.
An Autumn Salad of Mustard Greens with Watermelon Radish, Corn, & Apple
All ingredient quantities are approximate—adjust proportions to suit your taste and preference.
For the salad:
1 medium bunch mustard greens chopped into bite size pieces
3 medium watermelon radish diced
3 medium apples diced
1 ear of corn kernels cut
For the vinaigrette:
(basic proportions—adjust for the volume of your salad)
6T olive oil
2T apple cider vinegar
1T honey
1/2 small onion finely minced
salt and pepper, season to taste
Wash all produce and greens, and dry thoroughly before cutting or dicing. Whisk vinaigrette ingredients together in the bottom of a large serving bowl. Add the salad ingredients to the bowl and toss gently. Enjoy!
