Apples have been steadily elbowing their way in at the greenmarket, and I’ve been really enjoying the locally grown Galas. What better way to enjoy the sweet crispness of apples but in a chicken salad made with a bit of spice atop a thick slice of crusty, dark pumpernickel raisin bread?
The recipe is very simply, cold poached chicken breast and apples both cubed, finely chopped dried cranberries and red onion, a squeeze of fresh lemon juice, add only enough curry powder to give a mild curry flavor, add wasabi mayonnaise (found at specialty stores, or use regular mayonnaise, or a mix of the two) and fresh chopped chives. Great with a dark pumpernickel raisin bread.
