Hot days and nights of summer are here. Juicy watermelon refreshes and cools. I found this salad perfect to finish a summer meal as light dessert, of course it would be delicious as a starter too.
Watermelon Salad with Goat Cheese, Pistachios & Lemon Thyme Oil

Arrange on salad plates:
Watermelon, chilled and cut to large, bite-sized cubes
Sprinkle on crumbled goat cheese
Scatter across toasted, roughly chopped pistachio nuts
Drizzle with lemon thyme oil, made by bruising fresh lemon thyme leaves in the best olive oil you have along with a scant pinch of very fine lemon zest for more of a hint of lemon-y essence.
Scant pinch of Maldon salt to finish. Enjoy!
Saving this for summer, its winter here in AUS and I dont think I will appreciate it as much now.
