Collard Greens & Apple Sauté

All measurements are approximate, adjust to your own preferences.
2-4 T olive oil for sautéing and finishing
1 small onion, chopped finely
1 large tart apple, (like Granny Smith), chopped into bite-sized pieces
1 bunch collard greens, washed, stems removed and chopped into bite-sized strips
1-2 T honey
Season with salt & pepper to taste.
Over medium heat add olive oil to sauté pan and add chopped onion, then add the chopped apple, sauté until onion is translucent. Add the washed collard greens, sauté for 3-6 minutes until greens are tender. Finish with a drizzle of honey and olive oil. Season to taste with salt and pepper.
